Combining power and finesse, the 2021 white Jurançon Tauzy is a work of energy and delicacy around beautiful exotic notes. Coming from red clay and gravel soils, this blend of mansengs and petit courbu gives all its intensity of aromas, a fine and vibrant grain with a lot of purity. Dry, concentrated and fresh in profile, it offers enormous persistence, to be paired with smoked fish, poultry in cream sauce or Pyrenean sheep. To be enjoyed quietly over the decade. Hand harvested at the end of October. Slow pressing in whole bunches, vinification and maturation in wooden containers of different volumes and in sandstone eggs for 10%.Aged on lees for 10 months then 2 months in stainless steel tanks.
