Wine:

The 2020 white Burgundy-Chardonnay Laforêt combines a fresh, floral nose with hints of almond and a delicate, elegant oakiness with a full-bodied consistency, attesting to the maturity and richness of the vintage. The whole is dynamic, clean, fresh, and rich at the same time, with delicate bitters. It is a very beautiful wine, appreciable for its balance and its Burgundian typicity.

Vinification:

Purchase of grapes and musts from partner suppliers.
Slow pneumatic pressing, settling.
Aged in vats for 7 to 8 months, and a part from the best sources in barrels of 1 to 2 wines.

Bright gold.

Nose:

Fresh, marked by floral and white almond notes, underlined by a delicate and elegant woodiness.

Palate:

Fresh and ample with delicate aromas of fruit, this wine of good consistency offers a rich and dynamic juice, punctuated with delicate bitters.

Serve between 10 and 12°C.

Wine:

Bordering Pommard and originating from both old and newer vines, the 2022 red Bourgogne Côte d’Or is a delicate Pinot Noir that unfolds around fine flavors of syrupy cherries. Supple and minimally extracted, aged in barrels for half the time without any wooden embellishments, it's a light and enticing wine ready to be enjoyed with relish. It's perfect at this price point!

Vinification:

Hand-harvested, partially de-stemmed, aged in barrels for 12 months for 50% of the crop, and in vats for the remaining 50%.

Color:

Bright, intense red.

Nose:

Fine and powdery, marked by notes of cherry syrup.

Palate:

Gourmet and delicate, this cuvée has a supple profile, with crunchy, sapid juice, little extract and no oaky overtones.

Temperature:

Serve between 16 and 18°C.

Food and wine pairing:

Sautéed pork with prunes, marbled chicken breasts, rabbit stew.

Cellar aging:

From now until 2027, and even longer for enthusiasts.

Wine:

It has everything to please! The 2022 red Mercurey Les Bourguignons delivers perfectly ripe and fresh fruit, underscored by aromas of violet and raspberry. The juice is substantial, vibrant, and framed by a subtle oakiness that is present without being overpowering. An extremely delightful example of Pinot Noir. Rated 92/100 by the Committee.

Vinification:

Hand-harvested, pre-fermentation cold maceration for 3 days, vatting for 21 days in stainless steel tanks.
Aged 10 months in oak barrels, 20% of which are new.

Certified organic wine.

Color:

Ruby red with good intensity.

Nose:

Bouquet of violets with hints of raspberries.

Palate:

Fresh and dynamic, with dazzling fruit, this wine delivers a beautifully consistent juice with delicate, integrated oak.

Temperature:

Serve between 10 and 12°C.

Red tuna carpaccio, rabbit gibelotte, veal or chicken tagine.

A new sensation in the Côte Chalonnaise! The acquisition of Domaine de la Monette by Pierre-Etienne Chevallier in 2023 marks a turning point for this estate, which remains under the radar but is committed to the highest standards.

Having worked at La Vougeraie and Cellier aux Moines, this young winemaker is now dedicating all his talent and energy to nurturing the blessed terroirs of Mercurey, Givry, Rully, and Bouzeron.

Organic farming, parcel selection, manual harvesting in small crates, gentle and minimally interventionist vinification, and aging in oak barrels with a maximum of 20% new wood: everything here converges towards excellence!
