Wine:
Derived mainly from the 2018 harvest combined with reserve wines aged in magnums, the Grand Cru Chouilly Extra-Brut Blanc de Blancs Mag 18 Champagne reveals itself after several years of maturation in the Maison's cellars. A favorite of Olivier Poussier, rated 93+/100, it expresses the full maturity of Chardonnay with a beautiful mineral drive, a delightful definition of fruit with just a touch of welcome and subtle oxidation, giving it pastry-like notes, hints of bread crust, fine butteriness, and dried fruits. The palate has a lovely dimension with a creamy, velvety bubble, while remaining exceptionally fresh. This is an invigorating, straight, and pure champagne with a saline character on the finish. It pairs wonderfully with white fish or shellfish. A favorite of the Committee, rated 93+/100.Vinification:
