Wine:

Powerful and complete, the 2017 Côtes du Jura Vin Jaune is a stunning ambassador for this iconic oxidative wine—a perfect match for traditional poulet aux morilles or aged Comté. Its warm, expressive nose bursts with notes of marc, stone fruit, and mirabelle eau-de-vie, alongside hints of fresh walnut, anise, spices, and a delicate oxidative touch. On the palate, it is incredibly refined, with a bright acidity that brings freshness and energy. With time, this legendary wine will develop even deeper notes, reminiscent of dried morels. Best enjoyed with spiced dishes, green curry, Mont d'Or gratin, or the classic Bresse chicken with Vin Jaune and morels. Rated 93/100 by the Selection Committee and 94/100 by Bettane + Desseauve.

Vinification:

Hand harvested when overripe. Fermentation in stainless steel vats at a controlled temperature of 18°C. Aged for 6 years and 3 months in oak barrels, without ouillage (the process of topping off barrels with additional wine), under a delicate layer of yeast known as the "voile à jaune".

Color:

An intense and luminous golden yellow.

Nose:

Warm and powerful, with aromas of marc, stone fruits, notes of Mirabelle plum brandy, fresh walnuts and oxidative touches reminiscent of fenugreek scents and such distinctive milky notes.

Palate:

This 2017 vintage delivers remarkable finesse on the palate, with vibrant acidity that brings freshness and tension. As it ages, it will develop deep, savory notes reminiscent of dried morels.

Temperature:

Decant and serve between 18 and 20°C.

Food and wine pairing:

Spicy cuisine, meat or fish flavoured with green curry, cheese dishes such as baked Mont d'Or, 24- or 36-month mature Comté and, of course, the classic Bresse chicken in Vin Jaune with morels.
