Wine:

From 60- to 70-year-old vines, the 2022 Barbera d’Alba Superiore Pairolero represents the most concentrated and refined expression of the estate’s Barbera. Deeply coloured and built to age, it offers fragrant, floral aromas with intense notes of rose and black cherry. The palate is defined by its elegant depth and velvety texture, showcasing pure flavours of stone fruits. Aged in large oak casks to preserve its freshness and juiciness, this Barbera has the structure to age gracefully for at least 10 years. Among the top five examples of the appellation, it’s a wine every enthusiast should experience at least once. Rated 92-93/100 by the Selection Committee.

Vinification:

Hand harvested. Fermentation and maceration for 25 days using only indigenous yeasts. Spontaneous malolactic fermentation in barrels. Aged on the lees for 16 months in oak barrels, 15% of which are new, all from the François Frères cooperage in Burgundy. No filtering or fining.

Bright crimson red with purple highlights.

Nose:

Delicate floral and fruity aromas, with notes of rose and black cherry.

Palate:

An elegant and deep texture, revealing delicate flavours of stone fruits.

Temperature:

Serve between 14 and 16°C.

Lamb in herb crusts, duck with olives or cherries, beef a la plancha or grilled, fillet of beef in a mushroom crust.
