Wine:

The 2019 white Ajaccio Granit is a Vermentino with a clean, invigorating, and delicately oaked profile. This undoubtedly distinguished wine combines power and a burst of flavors, culminating in an intense citrus zest finish. A white wine with a very strong identity and considerable depth. Rated 94/100 by RVF.

Vinification:

Harvested by hand. Vermentinu parcel selection. Vinification and ageing for 12 months on lees in 500-liter foudres and demi-muids, followed by 7 months of mass ageing in stainless-steel vats. Production of 7,300 bottles.

Certified organic wine.

Temperature:

Serve between 10 and 12°C in a large glass.

Seafood, oven-roasted red mullet fillets, grilled sea bream a la plancha, fresh Corsican cheeses.
